Easy Apple Cinnamon Protein Pancakes!

I'm always looking for new healthy recipe ideas, especially for breakfast because I get SO tired of eggs and cereal! Yesterday morning when I was trying to figure out what to make I found pancake mix that I forgot we had. I was super excited until I realized that we had no butter, syrup or really anything else that I usually put on pancakes, so I had to get creative. I ended up making these apple cinnamon pancakes, and I loved them so much I thought I'd post about them! 

Ingredients:

1 Apple, Diced into small pieces

Cinnamon, As much as you want

Protein Pancake Mix, I use this kind

Peanut Butter, This is my fave 

Granola, I LOVE this one

1 Banana

Coconut Oil to coat the pan

Instructions:

Put apple pieces into a bowl with cinnamon and stir or shake until coated. in the same bowl, add the pancake mix, following the instructions on the package. Stir until mixed. Scoop about 1/4 cup of batter onto a pan coated with coconut oil at medium heat, and flip when it starts to bubble. (aka make pancakes the same way you've been making them all your life). When your pancakes are cooked, spread your peanut butter on top, then sprinkle the granola and add banana slices! 

Super simple, super fast, and so good! Not to mention that you only use one bowl, so clean up is a breeze!
